Christmas cookies galore in Viking’s free e-book

Viking Cruises is offering a free holiday cook book filled with delicious cookies and more. The book includes the sandkaker cookie, a  Hagen family favorite.

The cookies are popular in  Norway during Christmastime. It is best to bake them in sandkaker tins but you can use a small tartlet one instead. If you want to add a little more zest top them off with whipped cream and berries.

Sandkaker backstory

Sandbakelse (or sandkakers) are made of flourbuttereggssugar, and almond extract—possibly with vanilla or cardamom.  After mixing the dough, allow it to cool and then place into fluted tins.  They only take 10 minutes to bake, too.

A Norwegian cookbook first introduced the cookies in  1845.  But they were not widespread until later in the 19th century.  Emigrants took their tins and recipes west across the sea, where Sandbakelse remain an “old-country” Christmas tradition for many Norwegian-Americans.  From Wikipedia.
